Quick Vegetable Soup: A Keeper from the Recipe Box

When October begins, the rain starts to fall, and a fire is warming the room there is nothing better than homemade soup for dinner. This has been one of my keepers since I got Betty Crocker' s All-Time Favorites cookbook in the early '80's.

Quick Vegetable Soup
1 lb. ground beef
3 cups water
1 cup cut up carrots
1 cup diced celery
1 cup cubed, pared potatoes
2 medium onions, chopped ( about a cup)
1 28 oz. can of tomatoes
2 teaspoons salt
1 teaspoon bottled brown bouquet sauce
1/4 teaspoon pepper
1 bay leaf
1/4 teaspoon basil
( I added green beans to the batch above. Corn is also good to add. Be creative.)
Brown ground beef then drain off fat. Stir in the remaining ingredients and heat to boiling. Reduce heat. Cover and simmer just until vegetables are tender, about 20 minutes. 6 servings. Enjoy!

    when I was little my mom always used Kitchen Bouquet when she made gravy with pot roast.

  2. I'm also amazed at how quickly autumn came! Thanks for enjoying my photo show. I just found the site --- and it's really fun to play with! I think your students would enjoy it as well.

    All those photos were taken yesterday on the mountain. . .and some were taken in the rain. What a drizzle! We found several places where elk have been bedding down --- I'm worrying for them, as elk season starts soon. :( Our place is a haven for them and it seems sad that for a period of 10 short days life does a complete turn-around on them. Hopefully we can help maintain that haven (my DH's hunting buddies don't understand me at all! LOL!).

    You're so right - soups and fall go together. Add in some cider and donuts and you're all set ;)

  8. I bet this would be good without the beef too for the vegetarian me!
    It actually is quite warm here and I can't wait for it to get cooler so I get make lots of soup!
